Stir Fry Medley Recipe

I live for easy, simple recipes that are actually good. Don't get me wrong I love making a good meal, but sometimes I just want to be in the kitchen for a few minutes and still get a good meal. So that's where this stir fry medley comes in.

I was at Walmart doing some grocery shopping yesterday and saw this bag for only $2.50. Sure I could just buy fresh veggies and make a lot more, but I was kind of experimenting with this because *gasp* I've never made this before!

The think about this whole recipe is that you can make it your own. You can eat this cold, hot, and add whatever you want to it. Nothing is off limits here! I used 3 simple things here
  • Stir fry medley
  • Soy sauce (optional)
  • Water

Your two main ingredients.


Directions. You can microwave this also, but every time tastes better on a stove.


Nutrition. Only 30 calories a serving! The whole bag is only 120 calories, not bad at all


I added a little water and vegetable oil, the oil is optional you can just use water


Don't have a steamer? I don't either you can do this if you have a lid with holes on the side (mainly used for draining pasta) just let this set for 3-4 minutes or longer if you like your veggies soft like me.


When its just about done splash a little soy sauce on there for flavor


Now you can eat! Simple right? Now you can add chicken to this, even rice if you want. This is just a quick way to get some good healthy lunch. Hope you enjoyed!

Healthy Easy Snack or Meal Recipe


I came across a picture on fitsugar.com and it showed some ham with egg in it, baked inside of a muffin tin. I thought "what a great idea for a snack!" so I picked up a muffin tin (Im probably the only person who did not own a muffin tin before today) and decided to give it a try. Here is what I used but you can easily use any meat you want, and any condiment.
  • Turkey (great value brand is only 20 calories a slice)
  • Egg Beaters (this is a great alternative to eggs, but you can use eggs in a shell)
  • Salsa (I had some salsa in a can and used that, but you can use any kind of salsa you want or none)
Directions
  • Coat muffin pan with a non stick spray
  • Fold turkey in half place in muffin tin
  • Put one serving of egg beaters (3 table spoons) or one egg into the turkey
  • Then put one table spoon of salsa into the egg beaters
  • Put in the oven at 400 degrees let cook for 10-15 minutes, maybe longer depending on how well cooked you want your meat
Thats it! You can eat these right out of the oven (be careful!) or put them in the fridge for a cold snack. I had them hot and cold and they are good either way. I had 2 and they are pretty filling and the best part of all is that each one is only about 60 calories!

You can add spinach or any other veggie. you can also leave out the salsa, or ad a milder one. This is a recipe where you cant really go wrong! these could also work as party favors, or get your kids to help you make up their own concoctions, they'll love it!

Pico De Gallo Recipe

I don't know about you but one of my favorite things to snack on is chips and salsa. Im talking about home made salsa, not that store junk that has sugar (seriously who puts sugar in salsa?) I learned how to make my own a few years ago and didn't really perfect it (to my liking) until maybe a year and a half ago. I like home made salsa, because it's healthier, tastes better, and you know whats in it (the best part) My recipe is pretty easy and anyone can make it. Here is what you need


  •  4 Roma tomatos (this will make a nice size batch)
  • 2 jalapeno peppers (I only used one, but if you like your stuff spicy add 2)
  • 1/2 a lemon (use a fresh lemon instead of that plastic bottle stuff
  • 1/2 Onion (I used red, you can use white if you wish)
  • Cilantro (I add a little then more if need be)
Optional
  • Seasoning salt
  • Garlic powder
  • Black pepper
These items just give it a extra kick!

Now these next steps is what works for ME you can cut up your veggies how YOU like, mix how YOU like. After all the best thing about making food is experimenting. I use a food processor to chop up all my veggies. it saves me time. If you don't have one (even though I highly recommend getting one) just chop up veggies finely
  1. Cut up the roma tomatoes into halves and stick into food processor, chop up, put into container.
  2. Cut stems off jalapeƱo peppers (take out seeds if you don't want real spicy salsa) put in food processor
  3. Put onion into food processor with peppers, chop up
  4. Put cilantro in food processor, chop up
  5. Now that everything is in the container add 1/2 lemon juice
  6. Add seasoning (optional)
  7. Stir and enjoy!
Thats it! Pretty simple huh? Sure you can add even more veggies if you like i.e corn see what works for you!

Easy Guacamole Recipe


This is a easy and healthy guacamole recipe. I posted a recipe before, but changed a couple of things and it's much better. Here is what you need and the steps.

Note that everything listed is for a big batch. if you want a smaller batch use half and/or less

8 avocados 
2 Limes
1 red onion
2 jalapeno pepper 
3 Roma tomato
Cilantro (add as little or as many leaves as you want)

Optional - Seasoning Salt, Garlic Powder, and Black Pepper

1. Mash avocados in a bowl, but leave a little chunky
2. Add lime juice
3. Add everything else and mix together.

Addicted to Smoothies


I don't know about you but I love sweets. 98% of the time I go to the grocery store I leave with some kind of candy or cake, so now I'm trying to rectify the situation. A few days ago I made my first smoothie (usually I go to Jamba Juice, good but expensive!) and I loved it. I used a small dole package because I didn't know how much I would like it. Well I ended up loving it, and got addicted really quick.

The picture above is a frozen fruit pack from Walmart. This bag is huge and is about $7 and will make me about 6 large smoothies, not bad! Now I bought a large can of pineapple juice to add to it, cause well I love pineapple juice. It makes the smoothie sweet enough where you dont need any sugar. So how do you make it? Simple


  • Frozen fruit, any kind
  • Juice, this is optional
  • A blender
Thats it. Healthier then junk food, but just as good
